Mulled Wine (Hot wine – Vin chaud) a traditional recipe from Alsace.

In Winter, in Alsace, the North East region from France, close to Germany, there are Christmas market in every towns and villages. Since the weather can be very very cold and snowy, to warm themselves, people drink a traditional recipe prepared with wine and spices : Mulled Wine.

To prepare a Mulled Wine for 6 to 8 people, you need :

- one bottle of red wine (Syrah or Pinot Noire),

- 3/4 cup of granulated white or brown sugar,

- one cinnamon stick,

- two whole star anise (also known as Badiane)star anise

- two cloves

- one pinch of ground nutmeg,

- one non-treated lemon,

- two non treated oranges.

 

Remove the zest of half of lemon and of orange with a zester or a knife (if a knife then cut the zest as small as possible).

 

In a high sauce pan, mix together wine, sugar, cinamon and zests.

 

Bring to a boil , reduce heat and allow to simmer for three to five minutes.

 

Add the spices (star anise, cloves, nutmeg).

 

Simmer on low heat for 20 minutes, without boiling.

Cut the lemon and orange in small cubes.

 

Put the orange and lemon cubes in glasses and them pour the hot wine using a strainer.

 

Drink it very hot.
