A recipe inspired by the first trip of the Orient ExpressFebruary 22nd, 2012 | Posted by in French Recipes
In his book “Cuisine à bord”, François Desgrandchamps explains the wonderful menus that were served during the entire trip–on the cruise ships, aboard the Concorde, and the Orient Express.
The famous train Orient Express made its first voyage from Paris to Istanbul in 1884, more precisely from the October 8 to the October 14.
The French journalist, Edmond About, took part in this trip and wrote a book about it. In his book, he doesn’t talk a lot about the menus that were served. But upon arriving in Bulgaria, he wrote :
“As we are starving, we devour a simple goose joint, some large Turkish pastries, and a peach compote with some almonds swimming in a syrup that strongly smells of roses.”
Here is the recipe that we imagine :
Ingredients (4 servings)
4 white peaches
1 vanilla bean
2/3 cups of crystal sugar
20 peeled almonds
1 Roses confit jar, (1 jar of rose petal jelly)
1 almond ice cream pot.
Bring 2.5 cups of water to a boil. Dissolve the sugar into the boiling water and add the split Vanilla bean. Put the peeled peaches in the water and poach them for 10 minutes. Drain the peaches.
Serve the peaches warm, with a tablespoon of rose petals and a scoop of almond ice cream. Sprinkle with almonds.
