Tapenade is a Provence specialty. This is a spread mostly done from black Olives. We use it on thin slices of French baguette as an appetizer when possible with Pastis or Rosé wine.
The recipe is very simple but the quality of the ingredients is very important to obtain a perfect Tapenade.
Ingredients (servings : 6)
7 ounces of pitted black olives,
5 anchovy fillets,
8 small capers,
1 garlic clove
2 tablespoons of Olive oil.
Finely chop the garlic clove
Put all the ingredients in a mixer bowl and mix it finely. You’re done !
Use it as a spread on thin slices of French Baguette.
